Pinot Noir
 
Origin: Pinot Noir is the classic grape of France's Burgundy region.  It is typically described as soft and feminine, with good examples having aromas of summer fruits, such as raspberry and plum, with a hint of tobacco.  Pinot Noir is a light style red with a soft finish and an emphasis on retaining primary fruit flavours.

The oak treatment adds flavour complexity and tannins to help stabilise both colour and flavour in this difficult to make wine.

Fruit: The grapes were grown in the Halswell area and machine harvested April 06.

Juice Analysis: Brix 22, pH 3.53, TA 6.53 g/L

Winemaking: Two thirds of the fruit was cold macerated for 4 days before fermentation which was allowed to peak at 34ºC with hand plunging of grape skins four times daily.  8% was aged in the barrel and the balance was aged in stainless steel tanks with heavy toast, French oak slats for three months.

Total Alcohol 12.2%v/v

 

Titratable Acid 6.4 g/L

 

Total Sugar 2.2 g/L

 


Tasting Notes: Vibrant fruit aromas of fresh raspberries and smoky toasted oak.  It has attractive raspberry flavours with a smooth lingering finish.  Ideal for drinking over the next 18 months.

Food Matches: Meat and game dishes.
